Spätzle & Whole Grain Mustard Sauce

Spätzle Ingredients


2 cup Chef's Flour
½ tsp Salt
¼ tsp Nutmeg
3 Large Eggs
½ cup Milk
1 tbsp Europa Table
Shallot Olive Oil, tossing
1 tsp Italian Parsley, chopped

Mustard Sauce Ingredients


¼ cup Whole Grain Mustard
¼ cup Sour Cream
1 tbsp Honey, to taste
1 tbsp Apple Cider Vinegar or Lemon Juice
Salt and pepper, to taste

Spätzle & Whole Grain Mustard Sauce

Spätzle Directions

  1. In a large bowl, combine the flour, salt, and nutmeg (if using). In another bowl, whisk together the eggs and milk until smooth. Gradually add the egg mixture to the flour mixture, stirring until a thick batter forms.
  2. Bring a large pot of salted water to a boil over medium-high heat.
  3. Using the Spätzle Maker, fill the hopper with batter, and slide it back and forth over the boiling water.
  4. Cook the Spätzle for about 2-3 minutes, or until they float to the surface. Once they float, allow them to cook for an additional 1-2 minutes. Use a slotted spoon to remove the Spätzle from the water and transfer them to a small sheet tray. Drizzle with Europa Table Shallot Olive Oil to prevent them from sticking. Cool them in the fridge for about 30 minutes.
  5. Sauté the cooked Spätzle with a little Europa Table Shallot Olive Oil. Garnish with freshly chopped Italian parsley using the provided herb stripper.

Whole Grain Mustard Sauce Directions

  1. In a bowl, combine the whole grain mustard, sour cream, honey, and apple cider vinegar. Stir until well mixed.
  2. Add salt and pepper as needed. Adjust the sweetness by adding more honey if desired.
  3. Drizzle over the schnitzel or serve on the side for dipping.
