Raspberry Chipotle Sea Salt Crème Brûlée

INGREDIENTS:

1/2 cup Egg Yolk Powder
4 Madagascar Vanilla Beans
2/3 cup Lavendar Sugar, divided
Water, as directed for reconstituting egg yolk powder

Raspberry Chipotle Finish:

1/2 oz Raspberry Chipotle Sea Salt
Lavendar Sugar, as needed for brûléed topping

Raspberry Creme Brulee

INSTRUCTIONS:

  1. Preheat the oven to 325°F.
  2. Reconstitute the egg yolk powder according to the package instructions. Whisk until smooth and fully hydrated.
  3. Split the Madagascar vanilla beans lengthwise and scrape the seeds into the reconstituted egg yolks. Add the vanilla pods to the mixture as well, if desired, to further infuse the custard.
  4. Whisk the reconstituted egg yolks with most of the lavender sugar until smooth and well combined. Allow the mixture to rest briefly so the vanilla can infuse and the sugar can dissolve.
  5. Remove the vanilla bean pods, then divide the custard evenly among 4 porcelain crème brûlée dishes.
  6. Arrange the dishes in a deep baking pan and carefully add hot water to the pan until it reaches approximately halfway up the sides of the dishes, creating a water bath. Bake for 30–35 minutes, or until the custards are just set with a slight jiggle in the center.
  7. Carefully remove the dishes from the water bath and allow them to cool. Refrigerate until completely chilled.
  8. Just before serving, sprinkle the remaining lavender sugar evenly over the surface of each crème brûlée, creating a thin, even layer.
  9. Using the included blow torch, caramelize the sugar until golden brown and crisp. Allow the caramelized sugar to set for a minute or two before serving. Finish each crème brûlée with a light pinch of Raspberry Chipotle Sea Salt, allowing the sweet, smoky, fruity, and savory notes to complement the rich vanilla custard.
