Pomegranate Raspberry Creme Brulee

INSTRUCTIONS:

  1. Prepare the Pomegranate Balsamic Reduction by adding the pomegranate balsamic vinegar to a small saucepan. Simmer over low to medium-low heat, stirring occasionally, until reduced to a syrupy consistency. Remove from the heat and allow to cool slightly.
  2. Preheat the oven to 325°F.
  3. Reconstitute the egg yolk powder according to the package instructions. Whisk until smooth and fully hydrated.
  4. Split the Madagascar vanilla beans lengthwise and scrape the seeds into the reconstituted egg yolks. Add the vanilla pods to the mixture as well, if desired, to further infuse the custard.
  5. Whisk the reconstituted egg yolks with most of the lavender sugar until smooth and well combined. Allow the mixture to rest briefly so the vanilla can infuse and the sugar can dissolve.
  6. Remove the vanilla bean pods, then divide the custard evenly among 4 porcelain crème brûlée dishes.
  7. Arrange the dishes in a deep baking pan and carefully add hot water to the pan until it reaches approximately halfway up the sides of the dishes, creating a water bath. Bake for 30–35 minutes, or until the custards are just set with a slight jiggle in the center.
  8. Carefully remove the dishes from the water bath and allow them to cool. Refrigerate until completely chilled.
  9. Just before serving, sprinkle the remaining lavender sugar evenly over the surface of each crème brûlée, creating a thin, even layer.
  10. Using the included blow torch, caramelize the sugar until golden brown and crisp. Allow the caramelized sugar to set for a minute or two.
  11. For plating, drizzle a small amount of the pomegranate balsamic reduction around each crème brûlée, taking care not to cover the caramelized surface.
  12. Finish with freeze-dried raspberry pieces and a delicate sprinkle of fresh Madagascar vanilla bean seeds for an elegant presentation.
