Grilled Duck Breast with Apple Balsamic Reduction

INGREDIENTS:


2 Boneless Muscovy or Moulard Duck Breasts (6–8 oz each), skin on
1 tbsp Chipotle Olive Oil
1 tbsp Apple Balsamic Vinegar
1 tsp Dijon Mustard

SPICE BLEND:


1 tsp Finely Ground Coffee 
3/4 tsp Ancho Chili Powder
1/8 tsp Cayenne Pepper
1/2 tsp Smoked Paprika
1/2 tsp Dried Lemon Zest
3/4 tsp Herb Sea Salt (Thyme, Marjoram, and Tarragon Blend)

APPLE BALSAMIC REDUCTION:


2 tbsp Apple Balsamic Vinegar
1 tbsp Hot Honey
2 tsp Dijon Mustard

Duck Breast

INSTRUCTIONS:

  1. Using a sharp knife, carefully score the duck skin in a crosshatch pattern, cutting through the skin and fat without piercing the meat. This allows the fat to render more efficiently and helps create a crisp, golden exterior. Whisk together the chipotle olive oil, apple balsamic vinegar, Dijon mustard, and Spice Blend, then coat the duck breasts evenly. Refrigerate for 2 hours, allowing the flavors to marinate while maintaining the duck’s natural richness.
  2. Preheat the grill to medium heat (375–425°F). Remove excess marinade and place the duck breasts skin-side down over indirect-to-medium heat.
    Grill for approximately 8–10 minutes, allowing the fat beneath the skin to slowly render and the skin to become deeply golden and crisp.
    If flare-ups occur from the rendered fat, move the duck to a cooler section of the grill. The duck is ready to flip when the skin is crisp, much of the fat has rendered,
    and the internal temperature reaches approximately 115–120°F.
  3. Turn the duck breasts over and grill meat-side down for an additional 3–5 minutes, depending on thickness and desired doneness. For optimal tenderness and flavor, remove the duck when the internal temperature reaches 130–135°F for medium-rare or 140°F for medium. Allow the duck to rest for 5–10 minutes before slicing,
    as the temperature will continue to rise slightly during resting.
    For an alternative preparation using your Europa Table Kabob Basket, cut the marinated duck into 1½-inch pieces and grill over medium heat (375–425°F) for 8–12 minutes, turning occasionally, until the internal temperature reaches 130–135°F for medium-rare or 140°F for medium, rest briefly and serve with the Apple Balsamic Reduction.

Finish:

  1. In a small saucepan over medium-low heat, combine the apple balsamic vinegar, hot honey, and Dijon mustard. Simmer for 4–6 minutes, stirring occasionally, until the sauce thickens slightly and coats the back of a spoon. Remove from heat and reserve warm.
  2. Allow the duck breasts to rest before slicing thinly against the grain. Arrange the slices on a warmed serving platter and drizzle generously with the warm Apple Balsamic Reduction. For an elevated presentation, finish with a pinch of herb sea salt and a light dusting of fresh lemon zest, which brightens the richness of the duck
    and ties together the citrus notes in the spice blend.
